Yields: 4-5 Servings

Cook Time: 30 min

Ingredients

½ # Elbow macaroni

2 TBS Canna Butter

1 TBS Unsalted Butter

2 Tbs All-Purpose Flour

½ tsp Salt, to start, adjust to your taste

¼ tsp Black Pepper

1 ½ Cups Milk

¾ cup Half and Half

1 ½ Cups Cheddar Cheese, Shredded

¾ Cup Smoke Gouda Cheese, Shredded

¼ Cup Parmesan Cheese, Grated

Instructions

The first thing to do is to make sure your mind is right so spark up your spliff or bowl, or dab if that's your cup of tea. Once that mind is right head over to the oven and preheat it to 325 F. and get a baking dish ready and grease it up.

Cook the macaroni and don’t overcook it because this dish is still going into the oven and you don't want your pasta to be mush when it's done. So the macaroni should be al dente, then strain and rinse with cold water so the pasta stops cooking.

Now let's make that delicious cheese sauce, in a medium saucepan melt the butter over medium heat. Once the butter is melted mix in the flour, salt, and pepper, and continue to cook the mix on medium for a few minutes, this is called a roux and will thicken the milk and cream for the sauce.

Now slowly stir in the milk and half and half, making sure to constantly whisk the mixture, cook for a few more minutes and lightly thicken the cream sauce, this is called a bechamel sauce and is the base for several cream sauces and dishes.

Now that you have a bechamel sauce remove it from the heat and stir in the cheddar and gouda cheeses until they are melted. Now taste and adjust your seasoning according to your taste.

Add the macaroni and stir making sure the pasta is evenly coated, pour it into the baking dish and sprinkle the remaining parmesan cheese over the top and bake for about 15-20 minutes, just until the cheese melts and has a nice light brown color.

This easy Mac ‘N’ Cheese dish can easily be made into a great meal by adding some blackened or cajun grilled chicken, maybe lobster too. If you're more of the veggie side of things this recipe is great with broccoli, onions, and even mushrooms, make it your own with your favorite ingredients.
